Hudson Valley Magazine Profiles American Glory BBQ

American Glory Restaurant describes itself as a gastropub. Numerous local publications, including Hudson Valley Magazine, have profiled it.

Sarah E. Daniels, the magazine’s food critic, noted the restaurant’s unique blend of modern cooking techniques and traditional dishes, resulting in a new style of comfort food. Speaking to the magazine, owner Joe Fierro described the menu as “food brought to the New World by our ancestors, reinvented, regionalized…that’s American Comfort food.”

Daniels highlighted several of the most popular items on the menu, including the beer-battered fish and chips, the Hudson Valley beets salad, and the firehouse-style red chili with cayenne and steak frites. Photographer Roy Gumpel focused on the BBQ offerings, which come dry-rubbed, brined, and cured.

The eatery smokes its ribs slowly over locally sourced apple wood. Customers can order them as platters in portions of three-, six-, and nine. Plates come with various sides, including fresh cornbread, pickles, onions, and a third side of the customer’s choice, such as sweet potato fries.
